On Tuesday 24th November, The Consorzio del Formaggio Parmigiano Reggiano welcomed guests for an evening with acclaimed chef, Mark Best at the award-winning Marque Restaurant, voted the 4th best restaurant in Australia.
Throughout the evening, guests were treated to a range of specially crafted dishes by Mark Best that used one of three ages of Parmesan; 18, 24 or 36 months. The evening started with an exclusive selection of canaps using only 18 month Parmigiano Reggiano; Tomato and Parmesan Marshmallow and a Parmesan Custard, Gougre and Eggplant canap.
Showcasing the versatility of Parmigiano Reggiano with a heady mix of cognac, apple, honey, verjus and Parmesan water, a Parmesan Splice cocktail was specially created for the evening.
Dialogue Agency gave a talk about the special qualities, history and production of Parmigiano Reggiano and a guided tasting through three ages of the cheese. Mark Best also spoke about the inspiration behind each of the exclusive dishes, whilst the award-winning sommelier Simon Curkovic discussed the expert wine-pairings.
Using 24 month Parmesan, Mark Best created what he termed as a deconstructed Gnocchi dish, otherwise known as Parmesan Gnocchi with Pumpkin Consomm & Smoked Eel. The highlight of the evening was Mark Best serving a Cacio e Pepe risotto from a half wheel of 24 month Parmesan. Mark mentioned; Parmesan has always been an indispensable part of the Marque larder. For me it is the King of Cheeses.
The evening finished on a high, with guests enjoying a Parmesan Ice Cream & Parsnip Cornetto.
