Every year the Consorzio del Prosciutto di Parma Specialist Programme celebrates local delis and restaurants who display passion, knowledge and enthusiasm for the unique qualities of Parma Ham. The 2016 UK Parma Ham Specialist of the Year was MacFarlanes deli situated in Clapham, London.
On 23rd February, The Consorzio del Prosciutto di Parma invited press and media for a delicious selection of Parma Ham canaps and a glass of prosecco to celebrate MacFarlanes win.
MacFarlanes is a deli founded in 1998 in Clapham. Mel (first) and Tom (second), the store managers, have a passion for Parma Ham, selling it freshly sliced in the deli.
They have demonstrated a strong understanding of the product and its origins, which was expressed in their winning quote:
Sitting at the heart of our charcuterie selection, Parma Ham offers our customers quality and culinary flexibility. Thinly sliced on bread for lunch, wrapped round plump organic chicken breasts for dinner; Parma Ham is perfect. MacFarlanes uses it for filled and toasted sandwiches. During the evening there were speeches from both the Consortium and MacFarlanes about the product and its provenance, and freshly sliced Parma Ham was freshly slice from the award winning slicer. Exceptional guests included Elke Fernandez, from the Consortium, who flew over especially for the event.
