This Wednesday 30th September, the UK’s top sushi chef will be announced at Nobu, Old Park Lane. The competition has been heating up with chefs from top sushi restaurants such as Sake No Hana, Maze Grill Park Walk and Yashin Sushi preparing to face the line up of expert judges that will be critiquing their sushi skills.
The panel of elite judges include Michael Booth, Hideki Maeda, Jack-Robert Mller, Hirotoshi Ogawa and Kazuo Mizuno.
Michael Booth, an English food and travel journalist has invaluable knowledge of and expertise in Japanese cooking, as shown by the success of his book, Sushi and Beyond: What the Japanese Know About Cooking.
Hideki Maeda, Nobus Head Chef has been working for chef Nobuyuki Matsuhisas empire since 2001, developing his understanding of the cuisine and learning innovative Sushi skills.
Jack-Robert Mller is the UK Director for the Norwegian Seafood Council. He has 20 years experience in the fishing industry and holds a Master’s degree from the Norwegian College of Fishery Science in Marketing. Jack-Robert has a wealth of knowledge from his many different positions within the seafood industry.
Hirotoshi Ogawa, from the World Sushi Skills Institute developed his sushi skills at Tsuji Culinary School before working in sushi restaurants in Australia and Japan. Hirotoshi now enjoys teaching the art of sushi across the world and has created a Sushi Sashimi Skill Improve Program DVD.
Kazuo Mizuno, also from the World Sushi Skills Institute, has a fantastic history in the sushi industry. As Executive Officer of the Kashiwa branch of the All Japan Association, Kazuo has successfully developed new approaches to sushi and has been actively involved in developing a sushi training programme.
